Apple Pie Omelet

This may sound strange but I promise it's really good and a fun spin on the typical savory dish. The combo of apples, coconut milk, and nut butter is delicious and perfect for a lazy Sunday morning :-)
Ingredients
1 egg
2 tbsp. whole fat canned coconut milk
3 tsp. cinnamon
2 tbsp. applesauce (I used my homemade Apple Pear Sauce)
1 Apple
2 tsp. coconut oil
2 tbsp. Sunbutter or nut butter of choice
Instructions
Heat a small pan over medium heat and melt coconut oil.
Peel, core and slice apple then toss with a tsp. of cinnamon - Feel free to use more if desired.
Cook apple slices, flipping once, until softened then set aside.
In a bowl, whisk together egg, coconut milk, applesauce and 1 tsp. of cinnamon.
In a medium skillet, melt remaining 2 tsp. coconut oil.
Pour egg mixture into pan and cook for about 2 minutes before flipping.
Cook for a minute then spread Sunbutter onto omelet and top 1/2 with apple slices.
Gently fold over and cook for about 1 minute more.
Remove from the pan, top with more applesauce if desired and enjoy!
