Chocolate Banana "Ice Cream"

Summer is already in full effect around here! With temperatures over 100 degree, we're headed for the pool and reaching for nice cold, refreshing foods to cool us down. Like ice cream! It's hard not to enjoy ice cream when it's 100+ degrees outside. Am I right?!? BUT, eating ice cream everyday probably isn't the healthiest thing to do. A healthy alternative like this Chocolate Banana "Ice Cream", can make sure you still satisfy that craving for something cool and tasty, while packing in some nutrients as well.


Chocolate Banana "Ice Cream"


Ingredients

2 frozen bananas

1/4 cup cocoa powder

1 tsp. cinnamon (optional)

2 tbsp. coconut milk


Instructions

Place the bananas into a food processor or high powered blender. Pulse until finely chopped but not yet smooth. Add in the remaining ingredients and blend until well combined. Scoop into bowls, add desired toppings and enjoy!


* If too runny, freeze for 10-15 minutes until firm.


You can also scoop this into popsicle molds and freeze for fudge pops! Both equally delicious on a hot summer day!
