Gluten and Dairy Free Pumpkin Chocolate Chip Cookies!

Who loves cookies!?!? Me!!!! I'd say cookies are my downfall. Especially soft or chewy chocolate chip cookies. With it being pumpkin season and all, why not combine the all the goodness of chocolate chip cookies with pumpkin in a cookie!?!? These cookies are delicious AND they just happen to be gluten and dairy free.



Pumpkin Chocolate Chip Cookies


Ingredients

  • 1 cup blanched almond flour

  • 1/2 cup coconut flour

  • 1/2 tsp. baking soda

  • 1/2 tsp. sea salt

  • 2 tsp. pumpkin pie spice

  • 1/3 cup pumpkin puree

  • 1/3 cup coconut sugar

  • 2 eggs

  • 1/3 cup organic palm shortening (could also use organic butter)

  • 1 tsp. vanilla

  • 2 tbsp. honey

  • 1/4 cup mini Enjoy Life Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees.

  2. In a bowl, mix together dry ingredients except sugar.

  3. In a separate bowl, cream together sugar, pumpkin puree, eggs, palm shortening, vanilla and honey.

  4. Add dry ingredients to the wet mixture then add in chocolate chips.

  5. Once mixed well, drop onto a parchment lined baking sheet and gently press down to flatten slightly.

  6. Bake for 10-12 minutes or until lightly browned.

  7. Cool on a wire rack then enjoy!
