Nutty Protein Bars



Ingredients

  • 1 cup raw almonds

  • 1 cup raw pecans

  • 1/3 cup raw or sprouted pumpkin seeds

  • 1/3 cup raw sunflower seeds

  • 1/2 cup vanilla protein powder

  • 1/2 tsp. sea salt

  • 1 tsp. cinnamon

  • 6-7 pitted dates

  • 1/3 cup raw organic honey

  • 1/2 cup almond butter

  • 2 tbsp. coconut oil

  • 1 tsp. vanilla

  • 1/3 cup mini dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees.

  2. In a food processor, pulse nuts and dates until chopped well.

  3. Add in protein powder, cinnamon, and salt, pulse until mixed in.

  4. In a saucepan, melt coconut oil, almond butter, and honey.

  5. Remove from heat and add in vanilla.

  6. Stir to combine then pour into the nut mixture and pulse until a wet sticky mixture forms. You may have to stop to scrape down sides a few times.

  7. Press into an 2 quart baking dish then bake for 15-18 minutes or until lightly brown.

  8. Allow to cool then cut and wrap individually.
