Paleo Avocado "Hummus"



Ingredients

  • 1 large zucchini

  • 1 small avocado

  • 1 clove of garlic

  • 2 tbsp. tahini

  • 1 tsp. cumin

  • 1/2 tsp. paprika

  • 1/4 cup fresh cilantro

  • 2-3 tbsp. avocado oil (olive oil works well too)

  • salt and pepper to taste

  • Squeeze of lime juice (optional)

Instructions

  1. Place all ingredients except oil into a food processor.

  2. Pulse until finely chopped.

  3. Continue pulsing and slowly add in oil until the mixture is smooth and creamy.

  4. Serve with fresh veggies or desired dippers!
