Paleo Plum Coffee Cake


It's plum season! We just harvested our plums from our backyard tree and whipped up this delicious plum coffee cake! Gluten-free and sweetened with coconut sugar it's a healthy spin on a traditional coffee cake. The perfect way to utilize all the plums we have! You could easily make this recipe with peaches, nectarines, or any other type of stone fruit. In fact, it would be great with blackberries or even apples!


Ingredients

  • 1 lb of plums

  • 1/2 cup blanched almond flour

  • 1/4 cup coconut flour

  • 1/4 cup coconut sugar

  • 2 tsp. cinnamon

  • 1 tsp. baking powder

  • 1/4 cup coconut oil

  • 1 egg

  • 1 tsp. vanilla

Topping Optional

  • 1/4 cup chopped walnuts

  • 1/4 cup unsweetened flaked coconut

  • 2 tbsp. coconut oil

  • 1 tbsp. coconut sugar

Instructions

  1. Preheat oven to 350 degrees and lightly grease a 9x9 baking dish with coconut oil.

  2. Wash, halve and remove seed from plums.

  3. In a medium bowl, combine almond flour, coconut flour, baking powder, cinnamon and coconut sugar.

  4. In a separate bowl, mix together melted coconut oil, eggs, and vanilla.

  5. Add the wet ingredients to the dry and mix well.

  6. Spread into prepared baking dish.

  7. Spread mixture evenly into baking dish.

  8. Gently press plums skin side up into the dough.

  9. Bake for 40 minutes or until lightly golden.

  10. While baking, mix together topping ingredients.

  11. Remove cake and sprinkle topping over the top then bake for 15 minutes longer.

  12. Allow to cool slightly then enjoy!
