Paleo Raspberry Chocolate Chip Muffins

We have muffins in the freezer at pretty much all times of the year. Just so easy to grab, heat and eat on the run! I recently snagged a bunch of raspberries on sale so decided to whip up a batch of muffins using one of my favorite berries.

Paleo style!



Paleo Raspberry Chocolate Chip Muffins


Ingredients


3/4 cup Coconut Flour

2 Eggs

1/2 cup Egg whites

1/2 cup melted Coconut Oil

1/3 cup raw melted honey

1/4 cup unsweetened applesauce

2 tsp. vanilla

1/4 tsp. salt

1/4 tsp. baking soda

1/4 tsp. baking powder

1/2 cup Grain free, dairy free mini chocolate chips (I use Enjoy Life)

1 cup Frozen organic raspberries


Instructions

Preheat oven to 350 degrees.

Line or grease mini muffin tins then set aside.

In a medium bowl, combine all ingredients except chocolate chips and raspberries.

Mix ingredients well then fold in raspberries and chocolate chips.

Scoop into prepared muffin tins and bake for 35-40 minutes.


Like I said, I keep these in the freezer for quick on the go snacks or heat and eat breakfasts at home!
