Paleo Sun Butter Chocolate Chip Cookies


Ingredients

  • 1 1/2 cup Blanched Almond Flour

  • 1/2 tsp. baking soda

  • 1/4 cup coconut sugar

  • 1/2 tsp. sea salt

  • 2 tbsp. honey

  • 1/2 cup sunflower seed butter

  • 1/4 cup Palm Shortening or Coconut Oil

  • 1 egg

  • 1 tsp. vanilla

  • 1/4 cup Enjoy Life Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.

  2. Combine almond flour, coconut sugar, baking soda and salt in a medium bowl.

  3. In a separate bowl mix together the honey, sunflower seed butter, shortening (or oil) egg and vanilla.

  4. Add the wet mixture to the dry ingredients and mix well.

  5. Stir in chocolate Chips then roll into small balls and flatten with your palm on the prepared baking sheet.

  6. Bake for 8 - 10 minutes or until lightly browned.

  7. I like to take the out right around 8 minutes before they get too brown because we like them soft and chewy. If you leave them in longer they will be crispy.
