A few include:

Can improve digestion since it naturally binds to water and helps food move more easily though the digestive track
Rumored to help improve cellulite
Great source of dietary collagen
Source of protein and specific amino acids can help build muscle
Which is why when my kids ask for jello, I don't mind whipping some up using a good grass-fed gelatin. I actually enjoy it myself too!
Especially these Pumpkin Pie Jello Jigglers.

Pumpkin Pie Jello Jigglers
Ingredients
1 can whole fat, canned coconut milk
1/2 cup pumpkin puree
1 tbsp. pumpkin spice
2 tbsp raw honey
5 tbsp. grass-fed gelatin (I use Great Lakes)
Instructions
In a medium saucepan over medium heat, warm coconut milk, pumpkin puree, pumpkin spice and honey.
Just before it begins to simmer lower heat and whisk in gelatin 1 tbsp. at a time. If you do it all at the same time it will clump together.
Once the gelatin is dissolved, remove from heat and pour into molds or a baking dish.
Chill in the fridge until set up then pop out of molds or cut and enjoy!
