PUmpkin Pie Protein Balls


Ingredients

  • 1 1/2 cups old-fashioned oats

  • 1/4 cup + more if needed organic all natural peanut butter (any kind of nut butter would work, pecan would be really yummy!)

  • 1/3 cup 100% pure maple syrup (you could also use honey or agave)

  • 1/4 cup pure pumpkin puree

  • 1/4 cup coconut butter

  • 1 scoop Vanilla Protein Powder

  • 1/4 cup chopped raw walnuts

  • 1 1/2 tsp pumpkin pie spice

  • 1 tsp vanilla

  • 1/4 tsp sea salt

Directions

  1. Place all ingredients in a large bowl or stand mixer and stir until a sticky batter forms. 

  2. It should be wet enough to form into balls without falling apart. 

  3. Form into 24 bite size balls and store in the fridge until ready to eat.

  4. Taste like pumpkin pie!
